The London Tree Canopy Cover map that your enquiry referenced does not hold species data as it is produced via the analysis of high-level aerial imagery. The London Street Trees map does hold species data, and the data behind it is downloadable via the London Datastore. This is all the information the GLA holds regarding the species of mapped trees in London, though it looks like while there is data for the streets surrounding Hyde Park, there is no data on trees within the park itself. You may wish to contact The Royal Parks (who manage Hyde Park) as they hold mapped tree data for the areas they manage.
