In addition to often being paid less than the London Living Wage, many in London's catering sector often suffer a further loss of income when employers demand an 'admin fee' from tips received by waiters and waitresses. What is your position on this?

My position on this is clear. I call on all employers who are able to do so to pay the London Living Wage rate of £8.80 per hour, excluding tips.
